How to tell hatchery salmon from wild? ›

On a hatchery fish, the adipose fin is removed, while a wild fish has an intact adipose fin. Since the 1970s, federal agencies have worked closely with states and treaty tribes in the Pacific Northwest to reverse the decline of native salmon populations.

Trinity River coho salmon appear at the Trinity River Hatchery about mid-October and spawning extends through December. While providing for a popular fishery in other areas of the Pacific Northwest, recreational angling for coho salmon in California is prohibited.

The eggs and sperm are collected in a common trough that feeds into a bucket. Water is added to the eggs and sperm to induce fertilization. The excess sperm, ovarian fluid, and blood are rinsed away. The fertilized eggs are gently poured into an incubator tray.

Hatchery salmon aren't raised to maturity in a hatchery. They're released into the wild while still pretty small, then head off into the ocean; some return to their birth waters a few years later.

The reason that people buy and cook wild salmon is for its flavor. A happier, healthier, free-roaming fish delivers more salmon-y flavor and color. The color will be more intense and vibrant than that of the farm-raised stuff—more red-orange than pink— as will the flavor, which will be a lot more savory and complex.

Later, as fish return to spawn, strays from hatcheries can contaminate the wild gene pool with traits better suited to survival in steel tanks than in gravel beds. Hatcheries can also cause overfishing of their wild brothers and sisters.

Coho Salmon Oncorhynchus kisutch are a medium to large salmon, with spawning adults typically measuring 55 to 70 cm fork length and weighing from 3 to 6 kg (Moyle 2002). Spawning males are characteristically dark red on the sides, with the head and back dark green and the belly gray to black.

Adult coho salmon usually weigh 8 to 12 pounds and are 24 to 30 inches long. They typically spawn between the ages of 3 and 4. Female coho dig out gravel nests (redds) on stream bottoms where they lay their eggs. The eggs incubate for 6 to 7 weeks until they hatch.

If a ring of red is visible within the egg, there was an embryo at some point, but it has died. Remove this egg from the incubator. If you can see blood vessels within the egg, there is a live embryo inside. Blood vessels in chicken eggs are normally observable within 7 to 10 days of an egg's incubation.

There are very specific things to look for inside the egg at certain stages of development. When candling eggs to look for fertility, make sure the room is dark so you can see inside the egg better. Carefully hold the egg candling flashlight under the rounded end of the egg which is where the air sac is located inside.

Hatchery-reared fish can compete with wild salmon for food and other resources and weaken the fitness of wild stocks if they interbreed. Hatchery programs may hinder salmon recovery if they are not monitored, evaluated, and adaptively managed to limit risks to wild populations.

Those culled and spawned at the hatchery are destined to become pet food or fertilizer. Those who die in the creek become nutrients and food for a whole plethora of animals.

It's the right color.

Farmed salmon is lighter and more pink in color, while wild has a deeper reddish-orange hue. Farmed fish will also a lot more fatty marbling in its flesh (those wavy white lines) since they aren't fighting against upstream currents like wild ones.

All fish in federal hatcheries are marked with an adipose fin clip, denoting them as hatchery fish. This allows for a selective fishery, if you catch a fish that lacks its adipose fin you can keep it; if you catch a fish that has the adipose fin you are required to release that fish.

Juvenile fish in hatcheries are reared in a stable environment with abundant food and no predators. As a result, compared to wild fish, hatchery fish show: Increased competitive behavior and aggressiveness. Faster growth.
